Do share!!!

It was super easy. Assuming you have a stand mixer, it’s pretty much zero work. Otherwise, you have to use a hand mixer, but even still, the recipe is fool proof.

  • 3 Tbsp liquid egg whites
  • 1 C light (clear) corn syrup (I used Karo 1/3 calorie to reduce the impact on my waist line)
  • 1/4 tsp salt
  • 1 C powdered sugar (sifted)
  • 1 Tbsp vanilla extract (for traditional fluff. Experiment. Add lemon extract or orange extract or cinnamon or pumpkin pie spice or strawberry or rum or whatever else you want! You are not bound to the constraints of Vanilla!!)

Mix the egg whites on high until they are nice and frothy, keeping your mixer on high, add the salt. Mix for 1 minute.
Still on high, add the corn syrup in a steady stream. Mix on high for 5-8 minutes. Your mixture should be fluffy and white and at least double it’s original amount.

Turn mixer down to medium low, place splash guard on the sides of your mixer and add the powdered sugar steadily. Add in vanilla. Mix on medium low for 5 minutes.

Hide all the spoon and spatulas in your house because you’re going to want to eat ALL OF IT! Oh my.
